Remember a few post back, I told you about having new friends over for dinner. There were 3 out of the 4 people we invited who were new to our town and our church. Well that dinner was a success and since then, the women have gone to lunch at a restaurant and yesterday we had lunch at one of our new friend's home. We have included another person from our Sunday School class who didn't know many people either. She was actually a neighbor to one of the newer people. So now, we have formed a foursome that enjoys having lunch and doing things together. I guess that really does mean the first night of entertaining was truly a success! One nice thing about meeting new people is finding new recipes and in this case a whole new ingredient! Voila!.........
And the new recipe is:
Captain Cheese Bake
½ c. mayo
8 oz. pkg. cream cheese (softened)
2 c. grated sharp cheddar cheese
2 green onions (chopped)
6 Ritz crackers (crushed)
4 Slices bacon (cooked & crumbled)
½ c. Captain Rodney’s Boucan Glaze
Mix mayo, cream cheese, cheddar cheese & onions in greased quiche pan. Top with crackers and bake at 350 Deg. For 15 or 20 min. Top with bacon and Captain Rodney’s glaze. Serve with crackers and enjoy!

I don't know if the person that served this has ever heard of the Pioneer Woman, but I found the recipe there also. The glaze can be put on most anything I would guess. It is sweet and reminds me of pepper jelly in a liquid form. I think I could have eaten the whole recipe!
You know, one night of opening our house has led to more blessings than we would have ever expected - new friends, new activities, new ingredients and new recipes - and probably new inches on the old body! ha
